So I have challenged myself to one month of Pescetarian (will eat fish, dairy, and eggs)/Flexitarian (will on occasion eat red meat, but not often) diet to see how I feel health wise and all that fun stuff (I will become a typical Homerite, it’s bound to happen). If I feel more energetic and it works for me it’s something I’ll stick with.
So meal one I made Baked Ziti. Nice and Cheesy. Here’s what I did.
- Penne noodles (however much you need)
- 1/2 cup Ricotta cheese (or to taste ^_^)
- 1 cup Mozzarella cheese (see above)
- Spaghetti sauce
Boil your noodles until soft, and drain. Now I like making things easy and simple for myself cause I hate doing dishes and shouldn’t need to dirty a bunch so that I can eat. In the pot you cooked your noodles, mix all your ingredients together.
Put concoction into a baking pan/dish. Top with a little extra Mozzarella, and Parmesan (I also tossed on some chives) bake in the oven at about 350 for 20 minuets or so. And tadaaaa a heart attack just waiting to happen!
Some other ideas for those eating meat is fry some hamburger up, saute some onions (I didn’t want to take the time to do this), throw in some spinach and mmm your set. Ziti is such a versatile dish and it’s so easy and simple. Who wouldn’t want to enjoy this for dinner lunch or breakfast. (I’m only partially joking on the breakfast). This also freezes well for those that like simple dinners such as myself.
